Keeping Your Cast Iron Happy

For new or heavily stripped pans, repeat this process 2–3 times to build up the seasoning.
2. Skip the bubbles! Go easy on soap, just rinse your pan with hot water and scrub it with a stiff brush. Stuck-on food? Just grab some salt and scrub away.
3. Dry It Right After washing, dry your pan immediately. Just leave a very thin, even coating. Rust is the enemy, so don’t leave it wet.
